  • 4 eggs, slightly beaten
  • 2 c. sugar
  • 1 1/4 c. oil
  • 2 c. plain flour
  • 2 tsp. baking powder
  • 2 tsp. soda
  • 2 tsp. cinnamon
  • 1 tsp. vanilla
  • 3 1/4 c. grated carrots
  • 1/2 c. pecans, chopped
  • 1/8 tsp. salt

Directions

    Mix first three ingredients.

    Add dry ingredients and mix well.

    Add remaining ingredients, blending mixture.

    Pour into two 8 x 4 x 3-inch loaf pans and bake at 325° for 35 minutes or until done.

    Cool and frost with cream cheese frosting.
