Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 cup applesauce
  • 12 cup water
  • 4 eggs
  • 3 cups grated carrots
  • 12-1 cup raisins, optional
  • cream cheese frosting
  • 4 ounces cream cheese (I use light)
  • 14 cup margarine or 14 cup butter
  • 1 teaspoon vanilla
  • 2 cups powdered sugar

Directions

    Mix together dry ingrdients.

    Stir in applesauce, water, eggs, carrots, and raisins.

    Bake in greased cake pan at 350 for 35-40 minutes, or until done.

    For frosting, cream together cheese and margarine.

    Add vanilla.

    Slowly add powdered sugar.

    Use mixer.
