- 1 1/2 c. flour
- 1 1/4 c. sugar
- 1 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 (4 1/4 oz.) jars strained carrots (baby food)
- 2/3 c. oil
- 2 eggs, beaten
- 1/2 tsp. vanilla
- 1 (8 oz.) can crushed pineapple, drained
- 2/3 c. coconut
- 1/2 c. chopped walnuts
Directions

1Preheat oven to 350°.

2In a 9-inch square pan with whip, mix well the flour, sugar, baking soda, cinnamon and salt.

3Add carrots, oil, eggs and vanilla.

4Mix until blended.

5Stir in pineapple, coconut and walnuts.

6Bake 40 to 45 minutes.

7Double recipe for large cake pan.
