  • 2 c. flour
  • 1 c. sugar
  • 1/2 c. brown sugar
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 4 eggs
  • 1/2 (6 oz.) can thawed orange juice
  • 3/4 c. salad oil
  • 1 tsp. vanilla extract
  • 2 1/2 c. shredded carrots
  • 1/2 c. golden raisins
  • 1 c. chopped pecans
  • 1 small shredded cooking apple

    Preheat oven to 350°.

    Grease and flour a 10-inch Bundt pan. In a large bowl, mix flour, sugar, brown sugar, baking soda, cinnamon and salt.

    In a small bowl, beat eggs slightly; stir in orange juice, salad oil and vanilla.

    Stir egg mixture, carrots, raisins, nuts and apples into flour mixture just until flour is moistened.

    Pour batter into pan.

    Bake 50 to 55 minutes.

    Cool in pan 10 minutes; remove cake from pan and cool completely.
