- 4 medium carrots
- 3/4 c. cooking oil
- 1/2 c. sugar
- 1/4 c. brown sugar
- 2 eggs
- 1 1/4 c. flour
- 1 tsp. baking soda
- 1/2 tsp. salt
Directions

1Grate carrots into large bowl.

2Add oil and mix.

3Then add and mix sugar, brown sugar and eggs.

4Measure, add and mix in the flour, soda and salt.

5Pour into greased 8 x 8-inch square pan. Bake at 350° for 45 to 50 minutes.

6When cool, spread with Cream Cheese Icing.
