  • 4 eggs, separated
  • 2 sticks butter or margarine
  • 1/2 c. oil
  • 2 c. sugar
  • 2 large jars of baby food carrots
  • 1/2 jar water
  • 2 1/2 c. cake flour
  • 1/2 tsp. salt
  • 1 1/2 tsp. baking soda
  • 2 1/2 tsp. cinnamon

Directions

    Combine egg yolks and rest of ingredients until well blended. Beat egg whites and fold into batter. Pour batter into 2 prepared 9 inch baking pans. Bake at 375° for 25 to 30 minutes or until toothpick inserted in the middle comes out clean. Allow to cool then frost with cream cheese frosting.
