  • 3 c. raw carrots, grated
  • 2 c. sugar
  • 2 tsp. soda
  • 2 c. flour
  • 1 tsp. vanilla
  • 4 eggs, beaten
  • 1 1/2 c. salad oil
  • 1/2 tsp. salt
  • 1 1/2 tsp. cinnamon
  • dash of nutmeg
  • 1/4 tsp. clove
  • 3/4 c. chopped pecans
  • 3/4 c. raisins

    Beat eggs. Add sugar and beat. Mix dry ingredients and add alternately with salad oil. Add vanilla, carrots, nuts and raisins. Bake at 350° for 40 to 45 minutes in 9 x 13-inch pan or bake 1 hour in an angel food cake pan.
