  • 3 c. flour
  • 2 c. raw sugar
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1/4 tsp. salt
  • 2 c. carrots, grated
  • 1 1/2 c. safflower oil
  • 1 c. chopped nuts
  • 1 c. coconut
  • 2 tsp. vanilla
  • 1 small can crushed pineapple (approximately 8 oz.)
  • 3 eggs
