- 1 1/2 c. cooking oil
- 2 c. sugar
- 4 eggs
- 2 tsp. soda
- 2 tsp. baking powder
- 2 c. self-rising flour
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 1 tsp. vanilla
- 3 c. grated carrots
Directions

1Blend oil and sugar. Add eggs one at a time. Sift all dry ingredients together. Add dry ingredients to creamed mixture of oil and sugar. Stir vanilla and carrots into this. Bake in three 10-inch greased and floured pans for 30 minutes at 350°.

2Cool and frost with cream cheese frosting.
