  • 1 1/2 c. cooking oil
  • 2 c. sugar
  • 4 eggs
  • 2 tsp. soda
  • 2 tsp. baking powder
  • 2 c. self-rising flour
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 3 c. grated carrots

Directions

    Blend oil and sugar. Add eggs one at a time. Sift all dry ingredients together. Add dry ingredients to creamed mixture of oil and sugar. Stir vanilla and carrots into this. Bake in three 10-inch greased and floured pans for 30 minutes at 350°.

    Cool and frost with cream cheese frosting.
