Ingredients

  • 2 c. sugar
  • 2 c. flour
  • 4 eggs
  • 2 1/2 c. grated carrots
  • 1 small can crushed pineapple, drained
  • 1 1/2 c. cooking oil
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 2/3 c. chopped nuts

Directions

    Blend sugar, oil and eggs, one at a time, with wooden spoon. Add the dry ingredients.

    Add the carrots, pineapple and nuts last.

    Mix well and pour into well-greased 13 x 9 x 2-inch pan. Bake at 350° for 50 to 60 minutes (according to oven).

    Frost with buttercream icing or Philadelphia cream cheese frosting.
