- 2 c. sugar
- 2 c. flour
- 4 eggs
- 2 1/2 c. grated carrots
- 1 small can crushed pineapple, drained
- 1 1/2 c. cooking oil
- 2 tsp. baking powder
- 2 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. vanilla
- 2/3 c. chopped nuts
Directions

1Blend sugar, oil and eggs, one at a time, with wooden spoon. Add the dry ingredients.

2Add the carrots, pineapple and nuts last.

3Mix well and pour into well-greased 13 x 9 x 2-inch pan. Bake at 350° for 50 to 60 minutes (according to oven).

4Frost with buttercream icing or Philadelphia cream cheese frosting.
