- 1 junior size carrots
- 1 (8 oz.) pineapple tidbits
- 1 c. chopped walnuts
- 1 c. raisins
- 1 c. oil (Mazola or Wesson)
- 2 c. all-purpose flour
- 2 tsp. baking soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 1 tsp. vanilla
Directions

1Blend eggs and sugar.

2Add next 5 ingredients.

3By hand, blend well.

4Measure and sift flour, soda and salt together.

5Add to first mixture.

6Add vanilla and cinnamon.

7Mix well.

8Bake in greased 9 x 13-inch pan at 375° for 50 or 55 minutes or until cake springs back.
