  • 2 c. sugar
  • 1 junior size carrots
  • 1 (8 oz.) pineapple tidbits
  • 1 c. chopped walnuts
  • 1 c. raisins
  • 1 c. oil (Mazola or Wesson)
  • 2 c. all-purpose flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1 tsp. vanilla

    Blend eggs and sugar.

    Add next 5 ingredients.

    By hand, blend well.

    Measure and sift flour, soda and salt together.

    Add to first mixture.

    Add vanilla and cinnamon.

    Mix well.

    Bake in greased 9 x 13-inch pan at 375° for 50 or 55 minutes or until cake springs back.
