- 3 c. grated carrots
- 1/2 c. chopped nuts
- 1 1/2 c. vegetable oil
- 1 tsp. vanilla
- 3 c. flour
- 20 cherries (optional)
- 2 tsp. baking powder
- 2 tsp. soda
- 4 eggs, beaten
- 2 c. sugar
- 1 tsp. salt
- 1 tsp. cinnamon
Directions

1Set aside grated carrots, cherries and nuts.

2Combine dry ingredients and sift into a large bowl.

3Add oil, carrots and vanilla; stir by hand until well done, then beat for 3 minutes. Add nuts and cherries.

4Bake in greased and floured angel cake pan for 1 1/4 hours.
