  • 3 c. grated carrots
  • 1/2 c. chopped nuts
  • 1 1/2 c. vegetable oil
  • 1 tsp. vanilla
  • 3 c. flour
  • 20 cherries (optional)
  • 2 tsp. baking powder
  • 2 tsp. soda
  • 4 eggs, beaten
  • 2 c. sugar
  • 1 tsp. salt
  • 1 tsp. cinnamon

Directions

    Set aside grated carrots, cherries and nuts.

    Combine dry ingredients and sift into a large bowl.

    Add oil, carrots and vanilla; stir by hand until well done, then beat for 3 minutes. Add nuts and cherries.

    Bake in greased and floured angel cake pan for 1 1/4 hours.
