  • 3 eggs, beaten
  • 3/4 c. vegetable oil
  • 3/4 c. buttermilk
  • 2 c. sugar
  • 2 tsp. vanilla
  • 2 c. flour
  • 2 tsp. ground cinnamon
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 (8 oz.) can crushed pineapple, undrained
  • 2 c. grated carrots
  • 1 c. raisins
  • 1 c. nuts
  • 1 c. coconut

Directions

    In a mixing bowl, combine eggs, oil, buttermilk, sugar and vanilla; mix well.

    Combine together flour, cinnamon, baking soda and salt.

    Stir into egg mixture.

    Stir in pineapple, carrots, raisins, nuts and coconut.

    Pour in greased and floured pan.

    Bake at 350° for 50 to 55 minutes or until cake tests done.

    Do not overbake.
