- 3 eggs, beaten
- 3/4 c. vegetable oil
- 3/4 c. buttermilk
- 2 c. sugar
- 2 tsp. vanilla
- 2 c. flour
- 2 tsp. ground cinnamon
- 2 tsp. baking soda
- 1/2 tsp. salt
- 1 (8 oz.) can crushed pineapple, undrained
- 2 c. grated carrots
- 1 c. raisins
- 1 c. nuts
- 1 c. coconut
Directions

1In a mixing bowl, combine eggs, oil, buttermilk, sugar and vanilla; mix well.

2Combine together flour, cinnamon, baking soda and salt.

3Stir into egg mixture.

4Stir in pineapple, carrots, raisins, nuts and coconut.

5Pour in greased and floured pan.

6Bake at 350° for 50 to 55 minutes or until cake tests done.

7Do not overbake.

8Cool.

9Frost with Cream Cheese Frosting.
