- 1 1/2 c. salad oil
- 2 c. sugar
- 4 eggs
- 2 c. flour
- 2 tsp. baking powder
- 1 tsp. salt
- 2 tsp. cinnamon
- 3 c. grated carrots
- 1 c. pecans
Directions

1Combine oil and sugar together.

2Add eggs one at a time, beating after each.

3Sift together flour, baking powder, salt and cinnamon and add to egg mixture.

4Fold in carrots and nuts.

5Grease and flour 3 (9-inch) cake pans.

6Pour in batter.

7Bake at 350° for 40 minutes.

8Cool and frost with Cream Cheese Frosting.
