  • 2 c. plain flour
  • 1 1/2 tsp. baking soda
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 2 c. sugar
  • 1 1/2 c. Wesson oil
  • 4 eggs
  • 2 c. grated carrots
  • 1 can crushed pineapple (small can), drained
  • 1 c. chopped walnuts

Directions

    Sift together in a large bowl the flour, baking soda, baking powder, salt and cinnamon.

    Add sugar, Wesson oil and eggs. Beat good.

    Add carrots, pineapple and nuts.

    Bake at 350° for 45 to 50 minutes in greased and floured pan.

    Frost with vanilla icing.
