  • 1 1/2 c. oil
  • 4 eggs
  • 2 c. all-purpose flour
  • 2 tsp. cinnamon
  • 1 tsp. vanilla
  • 3 c. carrots, grated
  • 2 c. sugar
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 tsp. nutmeg, plus
  • 1 tsp. allspice, plus
  • 1 c. pecans

Directions

    Blend oil and sugar; add eggs, one at a time, beating well after each addition.

    Sift all the dry ingredients together and mix well.

    Add carrots, pecans and vanilla.

    Bake in three 10-inch greased and floured cake pans for 30 minutes at 350°.
