- 4 eggs
- 2 c. all-purpose flour
- 2 tsp. cinnamon
- 1 tsp. vanilla
- 3 c. carrots, grated
- 2 c. sugar
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1/2 tsp. salt
- 2 tsp. nutmeg, plus
- 1 tsp. allspice, plus
- 1 c. pecans
Directions

1Blend oil and sugar; add eggs, one at a time, beating well after each addition.

2Sift all the dry ingredients together and mix well.

3Add carrots, pecans and vanilla.

4Bake in three 10-inch greased and floured cake pans for 30 minutes at 350°.

5Cool and frost with the following.
