- 2 c. flour
- 2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1 1/2 tsp. salt
- 2 tsp. cinnamon
- 2 c. sugar
- 4 eggs
- 2 c. finely chopped carrots
- 1 (8 1/2 oz.) can crushed pineapple, drained
- 1/2 c. chopped nuts
- 1 (3 1/2 oz.) can flaked coconut
- 1 1/2 c. salad oil
Directions

1Sift together the flour, baking powder, baking soda, salt and cinnamon.

2Add sugar, salad oil and eggs; mix well.

3Add carrots, pineapple, nuts and coconut.

4Blend thoroughly.

5Bake in three 9-inch layer pans, greased and floured, at 325° for 30 to 40 minutes.
