- 4 eggs
- 1 3/4 c. sugar
- 1 c. oil
- 2 c. all-purpose flour
- 2 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 1/2 c. shredded carrot
- 1 c. shredded apple
- 1/2 c. chopped walnuts
Directions

1In a large bowl, beat eggs, sugar and oil.

2Stir together baking soda, salt, cinnamon and flour.

3Beat until mixed.

4Stir in carrots, apples and walnuts.

5Pour into 2 greased pans.

6Bake at 350° for 30 to 35 minutes.

7Cool.

8Serve plain or with frosting.
