- 2/3 cup packed brown sugar - 2 tbl softened butter - 3/4 cup lo-fat buttermilk - 1 tsp vanilla - 2 lg egg whites - 3/4 cup whole wheat flour - 1 1/2 cups oats - 2 tsp baking powder - 1 tsp cinnamon - 1/4 tsp baking soda - 1/4 tsp salt - 1 cup shredded carrot (2 sm) - 1/2 cup raisins

1beat sugar & butter @ med speed until well-blended ( 5 mins) - add buttermilk, vanilla & egg whites - beat well - lightly spoon flour into measuring up - level c knife - combine flour & next 5 ingred (flour through salt) - gradually add to sugar mix - beat until blended - stir in carrot & raisins - pour into dish - bake 33 mins or until pick comes out almost clean - cool in pan on wire rack
