  • 2 c. mashed, cooked carrots
  • 1 stick melted margarine
  • 1 c. milk
  • 1/2 c. sugar
  • 3 eggs, beaten
  • 2 Tbsp. flour
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 Tbsp. baking powder

Directions

    Puree together carrots, melted margarine and milk.

    Mix together sugar, eggs, flour, cinnamon, nutmeg and baking powder. Add pureed carrot mixture to rest of ingredients.

    Bake at 350° for 1/2 to 1 hour until crispy.
