Carrot Casserole

  • 1 lb. carrots
  • 1/2 c. chopped onion
  • 1/4 tsp. salt
  • 1/2 c. margarine
  • 1 tsp. sugar
  • 1 c. grated yellow cheese
  • 3/4 c. mayonnaise
  • 2 c. Pepperidge Farm crumbs

Directions

    Dice carrots.

    Cook in salted water until fork-tender; drain. Add chopped onion to melted margarine and saute for 5 to 10 minutes.

    Add all other ingredients to diced carrots, reserving 1 cup of crumbs.

    Pour into greased casserole.

    Top with 1 cup crumbs and dot with margarine.

    Bake at 350° until bubbling, about 20 minutes.
