  • 2 pounds Carrots
  • 4 cups Finely Diced Onions
  • 2 Tablespoons Oil
  • 1 stick Butter
  • 2 cups Shredded Cheddar Cheese
  • Salt And Pepper, to taste
  • Bread Crumbs, Enough To Cover Casserole

Directions

    Cook carrots until tender; drain and set aside. Saute onions in oil until they change color. Mash carrots with butter. Mix together with onions, cheese, salt and pepper. Spread into an 8 x 8 casserole dish. Cover with bread crumbs and bake at 350 degrees for 20-30 minutes or until browned.
