- 2 pounds Carrots
- 4 cups Finely Diced Onions
- 2 Tablespoons Oil
- 1 stick Butter
- 2 cups Shredded Cheddar Cheese
- Salt And Pepper, to taste
- Bread Crumbs, Enough To Cover Casserole
Directions

1Cook carrots until tender; drain and set aside. Saute onions in oil until they change color. Mash carrots with butter. Mix together with onions, cheese, salt and pepper. Spread into an 8 x 8 casserole dish. Cover with bread crumbs and bake at 350 degrees for 20-30 minutes or until browned.
