- 2 eggs
- 1 c. sugar
- 1 c. grated carrots
- 1 1/2 c. sifted flour
- 3/4 c. salad oil
- 1 Tbsp. baking powder
- 1 Tbsp. cinnamon
- 1/4 tsp. salt
- 1 c. walnuts
Directions

1Mix (do not beat), eggs, sugar and carrots.

2Add oil slowly, otherwise oil settles to the top.

3Add dry ingredients all at once; mix.

4Mixture is heavy.

5Add nuts.

6Use 5 x 9-inch pan, line the bottom.

7Bake at 350° for 1 hour.

8Test before removing from oven. Let bread cool; loosen edges, remove from pan, and wrap in foil while still warm.

9Place in refrigerator to cool (makes it moist).
