  • 1 1/2 cups confectioners sugar
  • 1/2 cup matzo meal
  • 2 cups grated raw carrots
  • 1/2 blanched almonds, ground
  • grated rind of 1/2 lemon
  • 1 TBS wine
  • 1/4 tsp salt

Directions

    Beat yolks till thick and lemon colored. Gradually add sugar, beating until light and fluffy. add matzo meal, carrots, almonds, rink, and wine. Mix well.

    beat whites with salt until stiff. Fold into yolks
