Ingredients

  • 1 1/2 c. mashed cooked carrots (about 6 large)
  • 1/2 c. packed brown sugar
  • 1/2 c. granulated sugar
  • dash of salt
  • 1/4 c. butter or margarine, melted
  • 1 tsp. cinnamon
  • 1 tsp. ginger
  • 1/4 tsp. each: cloves, nutmeg and allspice
  • 3 eggs, slightly beaten
  • 1 c. evaporated milk
  • 2 Tbsp. brandy or other spirits
  • 1 unbaked 9-inch pie shell
  • whipped cream

Directions

    In large bowl, mix well all ingredients except pie shell and cream. Pour into pie shell. Bake in preheated 375° oven 45 minutes or until knife inserted in center comes out clean. Cool. Serve with cream.
