  • 1 c. cooked and mashed carrots
  • 3/4 c. brown sugar
  • 1 c. milk
  • 2 eggs, well beaten
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/2 tsp. salt

    Combine ingredients and pour into a crust.

    Bake at 425° until crust is brown and filling is firm.
