Carrot Pineapple Gel

Ingredients

  • 2 c. grated carrots
  • 1 c. crushed pineapple, drained
  • 7/8 c. pineapple juice
  • 7/8 c. water
  • 1/2 tsp. salt
  • 1 small pkg. lemon jello
  • 1/2 c. chopped pecans

Directions

    Heat to boiling point pineapple juice, water and salt.

    Add lemon jello; stir until dissolved.

    Chill and when the jello is about to set add carrots, pineapple and pecans.

    Chill until firm.
