- 3 cup all purpose flour
- 5 tsp baking powder
- 1/3 cup sugar
- 6 oz butter, softened and diced
- 4 oz carrots, peeled and grated
- 1 cup buttermilk

1In a bowl, mix the flour, baking powder, sugar and a pinch of salt together. Add the butter and carrots and rub in with your fingers. Gradually mix in the buttermilk. Wrap in plastic wrap and chill for 1 hour.

2Preheat the oven to 325°F. Line a baking sheet with parchment paper. On a floured work surface, roll out the dough to 1 inch thick. Cut out 16 2-inch diameter circles, re-rolling as necessary. Bake for 20 mins, until a skewer comes out clean. Allow to cool on a wire rack.
