Carrot Soup

Ingredients

  • 6 sliced carrots
  • 1 onion
  • 4 c. chicken broth
  • 3 Tbsp. butter
  • 1 Tbsp. sugar
  • 1/4 c. cooked rice
  • 3/4 c. half and half

Directions

    Cook the carrots and onion together in boiling water until tender; drain.

    Puree in blender; empty into pot with broth, butter, sugar and rice.

    Bring to boil, then lower heat and simmer 15 minutes.

    Add half and half and stir until heated through. Serve immediately.
