Carrot Stuffing Casserole

- 4 c. carrot slices
- 1 medium onion, chopped
- 1 can cream of mushroom soup
- 1/2 c. grated Cheddar cheese
- 1 1/2 c. herb flavored stuffing mix (i.e. Pepperidge Farm)
- salt
- pepper
- 1/2 c. melted butter
Directions

1Cook carrots until tender; drain.

2Saute onion in 3 tablespoons margarine until soft.

3Stir in soup, salt, pepper, cheese and carrots.

4Spoon into a 2-quart greased casserole dish. Toss bread stuffing mix with 1/2 cup melted butter.

5Spoon on top of carrot mixture.

6Bake at 350° for 20 minutes.
