  • 1 lb. carrots in 1/4 to 1/2 inch slices
  • 2 Tbsp. water
  • 1 Tbsp. plus 2 tsp. olive oil
  • 1/4 c. chopped walnuts
  • 1 tsp. grated lemon peel
  • 1/4 tsp. salt
