- 1 (10-pound) bone-in shank-half ham (not pre-cooked)
- 2 tablespoons Dijon mustard
- 3 tablespoons honey
- 3 tablespoons brown sugar
Directions

1Preheat oven to 325 degrees F.

2Place ham in a roasting pan, preferably with a rack.

3Roast uncovered to an internal temperature of 140 degrees F as measured with an instant-read thermometer.

4Remove from oven and increase oven temperature to 425 degrees F. Remove the rind except for the part around the bone end and slash slits in the fat.

5Combine mustard, honey, and brown sugar, and brush over the surface.

6Return the ham to the oven and bake to an internal temperature of 160 degrees F, about 30 minutes.

7Remove from oven and let rest before carving.
