Cashew Chicken

  • 3 or 4 chicken breasts, cut into small pieces
  • 5 oz. cashews
  • 1 can water chestnuts
  • 1 can mushrooms
  • 14 oz. can chicken broth
  • 1/4 c. soy sauce
  • 2 1/2 Tbsp. cornstarch

    Saute cashews in 1/8 cup of oil.

    Remove from pan.

    Saute chicken pieces in deep frying pan.

    Add cashews, water chestnuts, mushrooms and chicken broth to frying pan.

    Bring to a boil.

    Mix 1/4 cup of soy sauce with 2 1/2 tablespoons of cornstarch as thickener.

    Thicken the chicken broth mixture.
