Ingredients
- 2 chicken breasts, diced
- 2 Tbsp. cooking oil
- 1 Tbsp. cornstarch
- 1/4 c. soy sauce
- 1/4 c. water
- 1/2 c. cashews
- 1/4 c. mushrooms, sliced
- 1/2 c. sliced celery
- 1 clove garlic, minced
- 1 (8 oz.) can sliced water chestnuts
- 1/2 c. diced onion
- 1 medium tomato, chopped
- salt and pepper to taste

Directions

1Fry chicken with mushrooms, celery and garlic for 3 minutes in oil.

2Add water chestnuts and onions.

3Fry 3 minutes.

4Mix cornstarch, water, soy sauce, salt and pepper.

5Pour into pan. Stir and cook 2 minutes.

6Add tomatoes and cashews and cook 2 minutes.

7Serve over rice.
