  • 6 skinned, pan-dressed catfish
  • 1 c. bread crumbs
  • 3/4 c. grated Parmesan
  • 1/4 c. parsley (fresh or dried)
  • 1 tsp. paprika
  • 1/2 tsp. oregano
  • 1/4 tsp. basil
  • salt and pepper

Directions

    Combine all ingredients in a plastic bag.

    Salt and pepper fish.

    Rub fish with a little margarine and roll in dry ingredients mixture.

    Bake fish in pan with rack at 375° for 25 to 30 minutes, or until fish flakes easily with fork.

    Before putting fish on rack spray with Pam to prevent sticking.
