  • 2 c. all-purpose flour
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 3 c. sugar
  • 1 c. coconut
  • 1 1/4 c. buttermilk
  • 3/4 c. oil
  • 3 large eggs
  • 2 1/2 tsp. vanilla
  • 8 oz. crushed pineapple
  • 1 c. pecans
  • 1/2 c. margarine
  • 3 Tbsp. corn syrup

Directions

    Combine flour, soda, salt, 2 cups sugar, coconut, 3/4 cup buttermilk, oil, eggs and 2 teaspoons vanilla in a large mixing bowl.

    Beat at medium speed for 5 minutes.

    Stir in pineapple and nuts.

    Pour batter in a greased and floured 13 x 9 x 2-inch pan. Bake at 350° for 40 to 45 minutes or until a wooden toothpick inserted in center comes out clean.
