- 6 Tbsp. (3/4 stick) unsalted butter
- 4 cloves garlic, minced
- 4 oz. thinly sliced Prosciutto, cut into thin strips
- florets of cauliflower, cut into 1/4-inch lengthwise pieces (slices)
- 2 Tbsp. all-purpose flour
- 1 1/2 c. heavy cream
- cayenne pepper (pinch)
- salt and pepper to taste
- 1 1/2 c. grated Swiss cheese
- 1/2 c. chopped fresh parsley
Directions

1Preheat oven to 350°.

2Melt butter over medium heat in large skillet.

3Add garlic; saute 2 minutes.

4Stir in the Prosciutto and saute 2 minutes more.

5Add the cauliflower and cook just until it begins to lose its crispiness, 3 to 4 minutes.

6Stir in flour, then cream.

7Blend.

8Season with cayenne, salt and pepper.

9Heat to boiling and immediately remove from heat.

10Pour the cauliflower into shallow dish.

11Top with the cheese and parsley.

12Bake until lightly browned and bubbling, about 30 minutes.

13Makes 6 to 8 portions.

14Serve immediately.
