- 1 head cauliflower
- 1/2 cup onion, chopped
- 1/4 cup grated sharp cheddar cheese
- 1 (10 3/4 ounce) can cream of mushroom soup (low-fat)
- 1/2 cup milk
- 6 saltine crackers
- 2 tablespoons butter, melted
Directions

1Steam or boil cauliflower and 1/4 cup onions until tender.

2Drain and place in a 13x9-inch casserole dish.

3Mix grated cheese with remaining onion.

4Add soup mixed with milk.

5Pour this mixture over cauliflower.

6Roll crackers and mix with melted butter.

7Sprinkle on top of a casserole.

8Bake at 350°F for 25 to 30 minutes.
