Cauliflower Leek Soup

Ingredients
- 1 tablespoon extra virgin olive oil
- 1 onion, chopped
- 2 leeks, chopped
- 1 head of Cauliflower
- water or vegetable stock
- a few sprigs of fresh thyme
- salt & pepper
- lemon juice & zest {optional}
Directions

1Start by adding olive oil to a large pot over medium to high heat.

2Saute the onion and leeks till tender, then add garlic until fragrant.

3You can now add the Cauliflower florets to the pot.

4Cover with water or vegetable stock and bring to a simmer.

5Once the Cauliflower is tender, season with fresh thyme, salt & pepper.

6I like to use an immersion blender to puree the soup.

7You can also use a blender or food processor.

8Just be sure to work in batches.

9Stir in lemon juice and zest.

10Serve hot!
