  • 2 lbs cauliflower, florets, trimmed
  • 3 12 tablespoons skim milk
  • 1 14 tablespoons margarine
  • 12 teaspoon kosher salt
  • 14 teaspoon black pepper, table grind

Directions

    Steam cauliflower until tender, approximately 3 minutes.

    Heat milk and margarine in a pot.
  3. 3
    Place cauliflower in a food processor, slowly add hot milk/butter mixture while pulsing on and off to puree until completely pureed.

    Do not over puree or consistency will be too loose.

    Consistency should be of mashed potatoes.

    Season with salt and pepper.

    Serve Immediately.
