- 2 lbs cauliflower, florets, trimmed
- 3 12 tablespoons skim milk
- 1 14 tablespoons margarine
- 12 teaspoon kosher salt
- 14 teaspoon black pepper, table grind
Directions

1Steam cauliflower until tender, approximately 3 minutes.

2Heat milk and margarine in a pot.

3Place cauliflower in a food processor, slowly add hot milk/butter mixture while pulsing on and off to puree until completely pureed.

4Do not over puree or consistency will be too loose.

5Consistency should be of mashed potatoes.

6Season with salt and pepper.

7Serve Immediately.
