Cauliflower Mashed Potatoes

  • 3 lbs (bags) frozen cauliflower florets
  • 1 cup Vegenaise (or Mayonaise)
  • 1/4 cup Smart Balance
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 handful fresh parsley

Directions

    Thaw cauliflower slowly on medium-low heat on stove top with some water and a little bit of vegetable oil. Do not brown it. When barely hot throughout, combine all ingredients in a food processor on high speed for 10 minutes. Add more salt or pepper to taste.
