- 1 medium onion, thinly sliced
- 1 medium red pepper, chopped
- 2 c. white vinegar
- 2 c. water
- 2 c. sugar
- 1 Tbsp. pickling salt
- 1 Tbsp. mustard seed
- 1 Tbsp. mixed pickling spice
Directions

1Combine ingredients in large pot.

2Bring to boil, stirring. Reduce heat, cook 10 minutes, stirring.

3Fill hot jars, leaving 1/2-inch space.

4Adjust lids.

5Process for 15 minutes in boiling water bath.
