- 1 medium Cauliflower
- 1/2 cup Water
- 1/2 cup Onion
- 1/2 cup Bacon
- 1/4 cup Spring onions
- 1/4 cup Melting cheese
- 1 dash Salt
- 1 dash Cajun spice (optional)
- 1 tsp Sugar
Directions

1Cut the cauliflower and add it with water to a blender or food processor, and blend it well until you have a smooth cream.

2If using the blender, you need a good blender for this.

3Chop the onion, bacon and spring onion

4Saute the onion with the bacon and 1/4 of the spring onions

5Add the cauliflower cream, and cook well (remember to stir constantly) for about 10 minutes

6Season with salt and the Cajun spice.

7Add the tsp of sugar

8Add the cheese, mix well until it melts and serve with a tbsp of olive oil
