- 1 onion
- 1 tablespoon butter
- 1 tablespoon flour
- 3 cups chicken broth or 3 cups vegetable broth
- 2 potatoes
- 1 bunch celery
- 1 cup milk
- fresh ground pepper
Directions

1Saute 1 chopped onion in 1 T butter until softened, about 5 minute.

2Stir in 1 T flour.

3Stir in chicken or Vegetable broth which ever you are using and fresh ground black pepper.

4Add 2 cubed peeled potatoes and 1 bunch sliced celery, about 6 cups.

5Bring to a boil. Cover and simmer, from 20 - 25 minutes.

6Puree in a food processor or blender.

7Reheat with 1 cup milk.

8Serves 4 - 6.
