- 1 c. lemon juice
- 2 tomatoes, peeled and chopped
- 1 large onion, chopped
- 1/2 c. olive oil
- 1 (2 1/2 oz.) jar capers, drained
- 10 to 15 pimiento-stuffed olives, chopped
- 1/4 c. chopped coriander
- 1 avocado, chopped
- 1 yellow pepper, chopped
