  • 2 lb. fillets of mackerel or other white fish, cut into 1/2-inch pieces
  • 1 c. lemon juice
  • 2 tomatoes, peeled and chopped
  • 1 large onion, chopped
  • 1/2 c. olive oil
  • 1 (2 1/2 oz.) jar capers, drained
  • 10 to 15 pimiento-stuffed olives, chopped
  • 1/4 c. chopped coriander
  • 1 avocado, chopped
  • 1 yellow pepper, chopped

Directions

    Combine fish and lemon juice in a glass bowl.
