- 34 cup chopped onion
- 13 cup chopped green pepper
- 2 cups sliced fresh mushrooms
- 12 cup chopped celery
- 1 12 tablespoons butter
- 1 lb bulk pork sausage
- 1 cup uncooked long-grain rice
- 2 tablespoons minced parsley
- 2 cups hot chicken stock
Directions

1In a heavy skillet saute onion, green pepper, mushrooms and celery in the butter.

2Remove vegetables to a large mixing bowl.

3Set aside.

4In the same skillet saute sausage, breaking it into little pieces.

5Drain off fat, add sausage to mixing bowl with vegetables.

6Add the rice and minced parsley, stir thoroughly.

7Stir in hot chicken stock.

8Pour into lightly greased 2 1/2-quart casserole with lid.

9Cover and bake at 350* for 30 minutes.

10Remove from oven and stir gently.

11Replace cover and bake an additional 30 minutes.
