- 3 tablespoons butter
- 1 large onion, chopped
- 1 lb potato, cut in 1/2 inch dice
- 4 cups corn
- 14 ounces chicken broth
- 2 12 teaspoons dried thyme
- 3 cups half-and-half
- 4 cups grated cheddar cheese
- 14 teaspoon pepper
Directions

1In a large saucepan, heat butter.

2Saute onions, 4 minutes.

3Add potatoes, corn, chicken broth, thyme and 2 cups water.

4Bring to a boil and cook until potatoes are just tender, 8 minutes.

5Add half and half and cheese and cook over medium heat, stirring, until cheese is melted, about 3 minutes.

6Season with pepper and serve.
