Cheddar and Corn Soup

  • 3 tablespoons butter
  • 1 large onion, chopped
  • 1 lb potato, cut in 1/2 inch dice
  • 4 cups corn
  • 14 ounces chicken broth
  • 2 12 teaspoons dried thyme
  • 3 cups half-and-half
  • 4 cups grated cheddar cheese
  • 14 teaspoon pepper

    In a large saucepan, heat butter.

    Saute onions, 4 minutes.

    Add potatoes, corn, chicken broth, thyme and 2 cups water.

    Bring to a boil and cook until potatoes are just tender, 8 minutes.

    Add half and half and cheese and cook over medium heat, stirring, until cheese is melted, about 3 minutes.
