- 2 eggs
- 1 (8 oz.) container Dutch apple low-fat yogurt
- 1/4 c. firmly packed light brown sugar
- 2 c. buttermilk baking and pancake mix
- 1/2 c. raisins
- 4 oz. (about 1 c.) shredded Cheddar cheese
Directions

1Preheat oven to 400°.

2Butter or line with paper baking cups, 12 (2 1/2-inch) muffin cups.

3In a large bowl, beat eggs until blended.

4Stir in yogurt and sugar.

5Add baking mix; stir until just moistened.

6Stir in cheese and raisins.

7Fill prepared muffin cups 2/3 full.

8Bake until a toothpick inserted in the center comes out clean, about 15 minutes.

9Remove muffins from pan.

10Serve warm or place on wire racks to cool completely.

11Store in a closed plastic container.
