- cooking oil
- 10 (6-inch) corn tortillas
- 2 c. chopped cooked chicken
- 2 (4 oz.) cans chopped green chilies
- 1/3 c. chopped onion
- 1 c. salsa
- 2 c. shredded Monterey Jack cheese
Directions

1Heat 2 tablespoons oil in skillet.

2Holding a tortilla with tongs, dip each in hot oil 5 to 10 seconds, or until limp.

3Drain on paper towels.

4Add more oil if necessary.

5Combine chicken, chilies, onion and salsa; spoon about 1/4 cup chicken mixture on tortilla.

6Roll up.

7Place tortillas, seam side down, in a 13 x 9 x 2-inch baking dish.

8Bake, covered, in a 350° oven for 20 to 25 minutes.

9Uncover; spread cheese on top.

10Bake 5 minutes longer, or until cheese melts.
