- 8 medium potatoes, peeled and cubed
- 1/2 c. sour cream
- 1/3 c. butter or margarine, softened
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 c. (4-oz) shredded cheddar cheese
- 2 bacon strips, cooked and crumbled
- 1 tsp. minced chives, optional
Directions

1Preheat oven to 325°.

2Place potatoes in a saucepan and cover with water; cover and bring to a boil over medium-high heat.

3Cook for 15 to 20 minutes or until tender.

4Drain and mash.

5Add sour cream, butter, salt and pepper; beat until smooth and fluffy. Transfer to a greased 2-1/2 quart baking dish.

6Sprinkle with cheese, bacon and chives if desired.

7Bake, uncovered for 20 minutes or until heated through and cheese is melted.
